From nameless native varieties. Fresh, savoury and quietly unpredictable.
Delèlena
Sangiovese IGT — Steel-Aged
Sangiovese at its most candid. Cherry, violet, bright acidity.
Tabu
Sangiovese IGT — Oak-Aged
Structured and enveloping. Oak-aged, with notes of pepper and tobacco.
L’Oro di Preggio
Passito — Malvasia & Trebbiano
Amber and sun-soaked. Apricot and honey, the perfect close.

Rustic bread, our estate extra-virgin olive oil and a selection of vegan cheeses with Preggio honey.
L’Orto e lo Zafferano
Poached egg over seasonal vegetables (asparagus, broad beans or courgette) with saffron velouté.
Umbricelli della Tradizione
Hand-rolled Umbrian pasta with white duck ragù and garden herbs.
Il Piccione alla Ghiotta
Slow-cooked stuffed pigeon, with new potatoes from the garden and rosemary.
Crostata Chiudivigna
Saffron shortcrust tart with fresh fruit and berries from our garden.

Warm walnut bread, new harvest olive oil and aged vegan cheeses with autumn preserves.

Duck and pigeon liver crostini and pumpkin tartlet with a soft, melting heart.
Pappardelle di Carattere
Hand-rolled pappardelle with hand-cut duck ragù, scented with our Tabu wine.
Anatra della Festa
Braised duck with wild fennel and olives, hand-mashed potatoes.

Artisan saffron and honey tozzetti, to dip in passito wine.
